Sindhi-Style Fool Gobi Aloo

Ingredients

  • cauliflower, cut into medium-sized florets
  • 4-5 potatoes, peeled and cubed
  • 2 tomato, finely chopped
  • 2-3 green chillies, finely chopped
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • Salt to taste
  • 2 table spoon oil
  • Fresh coriander leaves for garnishing
  • Green garlic its seasonal if available use it for best taste.

Method

  1. Heat water in Kadhai and boil Fool Gobhi for 5 minutes. Heat oil in a Kadhai Let them splutter.
  2. Add cubed potatoes(Aloo) and cauliflower(Fool Gobhi) florets. Mix gently until the spices coat the vegetables evenly.
  3. Add chopped tomato and cook until it turns soft and mushy. Cover up with plate.
  4. Remove extra oil and add coriander powder, turmeric powder, red chilli powder, and salt. Mix well.
  5. Garnish with fresh coriander leaves and serve hot with chapati or rice. Enjoy your delicious Sindhi-style Fool Gobhi Aalu!
